Knead bagels is owned and operated by Adam and Cheri Willner, who met while working together at Matyson BYOB. Before launching we welcomed our first child, Silas, in 2013. Adam grew up in the western suburbs of Philadelphia. He graduated from Colby College in 2000 with a BA in English, and began a career in sales. After several profitable yet unfulfilling jobs, he decided to feed his passion and began cooking professionally. He’s worked at Jones, the Continental, and the Sidecar Bar, but spent most of his career at Matyson, where he started as a line cook and worked his way up to head chef before deciding to open Knead Bagels.
Cheri is a Florida/California transplant that first came to Philly after graduating from FIDM in San Francisco, eager to see what the North East had to offer. She got a “temporary” job at Matyson that lasted nearly 5 years! She briefly left Matyson to get a “real” job and realized that the food industry was where she belonged, and returned.
The idea for Knead began when we were tasked with starting up Brunch service at Matyson, and Adam said, “I want to try making bagels.” Pretty soon, we realized that we were producing bagels that exceeded our high standards for one of our favorite foods, and it became crystal clear that a bagel shop was in our future.
